Australian roast lamb: Meltingly tender

Roast lamb is a classic dish that is popular in many countries around the world, including Australia. It is a hearty and flavorful dish that is perfect for a special occasion or a Sunday roast.

Ingredients:


  • 1 leg of lamb, bone-in, about 5 pounds

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • 2 tablespoons dried oregano

  • 1 tablespoon dried thyme

  • 1 teaspoon ground cumin

  • 1 teaspoon garlic powder

  • 1/2 teaspoon cayenne pepper (optional)

  • 2 cloves garlic, minced

  • 1 onion, chopped

  • 2 carrots, peeled and chopped

  • 2 parsnips, peeled and chopped


Instructions:


  1. Preheat the oven to 325 degrees Fahrenheit (163 degrees Celsius).

  2. In a small bowl, combine the olive oil, salt, pepper, oregano, thyme, cumin, garlic powder, and cayenne pepper (if using).

  3. Rub the lamb with the spice mixture, making sure to coat it evenly.

  4. Place the lamb in a roasting pan and add the garlic, onion, carrots, and parsnips.

  5. Roast for 2-2.5 hours, or until the internal temperature of the lamb reaches 145 degrees Fahrenheit (63 degrees Celsius).

  6. Let the lamb rest for 15 minutes before carving.

  7. Serve with your favorite side dishes, such as mashed potatoes, gravy, and roasted vegetables.


Tips:


  • For a richer flavor, use bone-in lamb.

  • If you don't have cayenne pepper, you can omit it or use a pinch of red pepper flakes instead.

  • The lamb can be roasted on a rack to allow the fat to drain away.

  • Lamb can be prepared ahead of time and reheated.
