Escudella: a hearty winter warmer Andorran dish

Ingredients:


  • 1 pound beef bones

  • 1 pound pork bones

  • 1 pound chicken

  • 1 pound lamb

  • 1 pound sausage

  • 1 onion, chopped

  • 2 carrots, chopped

  • 2 celery stalks, chopped

  • 1 tablespoon olive oil

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon ground cumin

  • 1/4 teaspoon ground turmeric


Instructions:


  1. In a large pot, combine the beef bones, pork bones, chicken, lamb, and sausage. Add enough water to cover the meat by at least 2 inches. Bring to a boil, then reduce heat to low. Simmer for 2 hours, or until the meat is tender.

  2. While the meat is cooking, heat the olive oil in a large skillet over medium heat. Add the onion, carrots, and celery and cook until softened, about 5 minutes.

  3. Add the cooked vegetables to the pot with the meat. Add the salt, pepper, cumin, and turmeric. Bring to a boil, then reduce heat to low. Simmer for 1 hour, or until the vegetables are tender.

  4. Serve the escudella hot.


Tips:


  • For a richer flavor, you can add a few tablespoons of tomato paste to the pot with the vegetables.

  • If you don't have time to soak the beans overnight, you can add them to the pot with the meat and cook for an additional 30 minutes.
