Ingredients:


  • 2 bell peppers (any color)

  • 2 tomatoes

  • 1 onion

  • 4 eggs

  • 1 cup chopped feta cheese

Instructions:

  1. Preheat oven to 400°F (200°C).

  2. Halve the bell peppers and remove the seeds and ribs. Place the peppers on a baking sheet and roast for 20 minutes, or until tender.

  3. While the peppers are roasting, dice the tomatoes and onion.

  4. Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.

  5. Add the diced tomatoes and cook until they start to break down, about 5 minutes more.

  6. When the peppers are cool enough to handle, peel and dice them.

  7. Add the roasted peppers, tomatoes, onions, eggs, and feta cheese to the skillet. Season with salt and pepper to taste.

  8. Cook over medium heat, stirring occasionally, until the eggs are set, about 5 minutes.

  9. Serve warm.


Tips:


  • For a spicier fërgesë, add a pinch of red pepper flakes to the skillet with the onions.
